One of our local groceries puts slabs of "sirloin roast" out now and then for $5.99/lb. About 3 inches thick. No one buys them (top round and chuck roast are $3.99) so I grab them on the markdown for $2.99, slice to steak size, and eat or freeze. :-)

They caught on about the whole vacuum-sealed 5lb beef tenderloins though. They used to put them out at $9.99/lb, no one would buy them, and I'd get them at $3.99 with two-three weeks left on the dates. Once again, slice filets, butcher wrap, freeze. Then they got smarter, dangit. Now when they don't sell immediately as whole tenders they chunk 'em to small roast size, marinate 'em, and put 'em in the butcher case at $7.99.

I really miss the days when I knew one of the butchers at our local low-income-area store. Corporate would send them nicer cuts they couldn't sell so it had to be discount-saled out. He'd save it for me and give me a call. Once I got ten lbs of vacuum-sealed frenched lamb racks for $1/lb. Mmmmmm.....
